Soft Sourdough Sandwich Bread

Ingredients
1/2 cup butter softened (113 g)
2 tablespoons honey (42 g)
1 tablespoon kosher salt (17 g)
1 cup starter, thick and bubbly (227 g)
2 1/2 cups water (590 g)
8 cups Niobrara Grain and Milling Bread flour (1120 g)
Instructions
1. Combine water, butter, honey, active starter, salt, and honey until well combined
in a large mixing bowl.
2. Add 7 cups of flour until well combined, adding the remaining flour slowly until
the dough is not too sticky.
3. Knead dough approximately 10 minutes, until smooth and stretchy.
4. Allow dough to bulk rise 10-12 hours either on counter or in the fridge.
5. Divide in two equal parts.
6. Shape dough and place in greased loaf pans.
7. Second rise until dough doubles.
8. Bake at 375 for 45 minutes, or until golden on top. Top with melted butter.
