Soft Dinner Rolls

Ingredients:

2 ¾ cup Niobrara Grain and Milling bread flour

¼ cup sugar

1 ½ teaspoon active yeast

1 teaspoon salt

6 ounces of hot water

1 egg at room temperature

1 tablespoon softened butter


Directions:

  1. Combine 2 ¼ cup flour, sugar, and yeast in a mixing bowl.
  2. Add hot water (hot from the tap), egg, and butter.
  3. Mix for 2 minutes on low speed. 
  4. Add salt to the dough mix for 2 minutes.
  5. Let sit for 5 minutes.
  6. Add flour ¼ cup at a time until the dough pulls away from the sides and the dough is not sticky, mixing about 5 minutes.
  7. Grease the bowl, add dough to the bowl, and grease the top of the dough. Place in a warm place, let rise til double.
  8. Divide dough into 9 equal parts, shaping into balls, and place in a greased 9x9 pan. Let rise until it doubles.
  9. Preheat oven to 375°F while the dough is rising. 
  10. Bake 20-23 minutes until golden brown.
