Soft Dinner Rolls

Ingredients:
2 ¾ cup Niobrara Grain and Milling bread flour
¼ cup sugar
1 ½ teaspoon active yeast
1 teaspoon salt
6 ounces of hot water
1 egg at room temperature
1 tablespoon softened butter
Directions:
- Combine 2 ¼ cup flour, sugar, and yeast in a mixing bowl.
- Add hot water (hot from the tap), egg, and butter.
- Mix for 2 minutes on low speed.
- Add salt to the dough mix for 2 minutes.
- Let sit for 5 minutes.
- Add flour ¼ cup at a time until the dough pulls away from the sides and the dough is not sticky, mixing about 5 minutes.
- Grease the bowl, add dough to the bowl, and grease the top of the dough. Place in a warm place, let rise til double.
- Divide dough into 9 equal parts, shaping into balls, and place in a greased 9x9 pan. Let rise until it doubles.
- Preheat oven to 375°F while the dough is rising.
- Bake 20-23 minutes until golden brown.
