Easy Cinnamon Bites

Ingredients

Dough:

Cinnamon Topping:

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup salted butter melted

Icing:

  • 1 tablespoon butter melted
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons whole milk

Directions:

  1. Combine warm water, sugar, and yeast in a mixing bowl. Let sit 3-5 minutes until yeast starts to create a foam on top.
  2. Add 3 cups of Niobrara Grain and Milling Bread Flour to the water and yeast mixture. 
  3. Add flour to the bowl until the dough starts to pull away from the sides of the bowl. The dough should not stick to your hands. 
  4. Mix on slow to medium speed or knead for 3 minutes. 
  5. Cover and let rest for 10 minutes.
  6. Grease cast iron skillet with butter.
  7. Divide into 24 pieces and roll into balls.
  8. Place balls in greased skillet. 
  9. Let rise for 20 minutes.
  10. Preheat oven to  preheat oven to 350 F.
  11. Bake for 20 minutes or until golden brown.
  12. Melt butter and combine sugar and cinnamon.
  13. Brush half of the melted butter over baked rolls, sprinkle cinnamon and sugar mixture over the butter, then pour the rest of the butter over rolls.
  14. Combine icing ingredients, drizzle over rolls.
  15. Serve warm.
