Easy Cinnamon Bites

Ingredients
Dough:
- 1 ½ cups warm water about 105 F
- 1 tablespoon active yeast
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 3-4 cups Niobrara Grain and Milling Bread Flour
Cinnamon Topping:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 cup salted butter melted
Icing:
- 1 tablespoon butter melted
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons whole milk
Directions:
- Combine warm water, sugar, and yeast in a mixing bowl. Let sit 3-5 minutes until yeast starts to create a foam on top.
- Add 3 cups of Niobrara Grain and Milling Bread Flour to the water and yeast mixture.
- Add flour to the bowl until the dough starts to pull away from the sides of the bowl. The dough should not stick to your hands.
- Mix on slow to medium speed or knead for 3 minutes.
- Cover and let rest for 10 minutes.
- Grease cast iron skillet with butter.
- Divide into 24 pieces and roll into balls.
- Place balls in greased skillet.
- Let rise for 20 minutes.
- Preheat oven to preheat oven to 350 F.
- Bake for 20 minutes or until golden brown.
- Melt butter and combine sugar and cinnamon.
- Brush half of the melted butter over baked rolls, sprinkle cinnamon and sugar mixture over the butter, then pour the rest of the butter over rolls.
- Combine icing ingredients, drizzle over rolls.
- Serve warm.
