Zucchini Bread

Indulge in the wholesome goodness of homemade zucchini bread made with Niobrara Grain and Milling's Orgainic Whole Wheat  or Heritage Turkey Red flour. This nutrient-packed recipe blends the moisture of fresh zucchini with the rich flavors of our premium whole wheat flour. Simple, satisfying, and delicious, this zucchini bread is a must-try for any baker!

Ingredients

1 ½  cups of sugar
1 cup of vegetable oil 
3 eggs
3 cups of Niobrara Grain & Milling Flour 
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of vanilla
½ cup of milk
2 cups of grated zucchini (moisture squeezed out)
⅔ cup chopped nuts (optional)


Directions

  1. Mix sugar, oil and eggs together
  2. Mix all the dry ingredients together and add to the above mixture.
  3. Stir in milk, zucchini and nuts.
  4. Preheat oven to 350℉.
  5. Grease 2 9x5 loaf pans. Separate dough into each pan equally. 
  6. Bake for 1 hour or until a toothpick inserted in the middle comes out clean.  
  7. Remove from the oven, let cool in the pan for a few minutes before removing. 
  8. Cool completely or slice and enjoy while it’s still warm.
