Zucchini Bread

Ingredients
1 ½ cups of sugar
1 cup of vegetable oil
3 eggs
3 cups of Niobrara Grain & Milling Flour
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of vanilla
½ cup of milk
2 cups of grated zucchini (moisture squeezed out)
⅔ cup chopped nuts (optional)
Directions
- Mix sugar, oil and eggs together
- Mix all the dry ingredients together and add to the above mixture.
- Stir in milk, zucchini and nuts.
- Preheat oven to 350℉.
- Grease 2 9x5 loaf pans. Separate dough into each pan equally.
- Bake for 1 hour or until a toothpick inserted in the middle comes out clean.
- Remove from the oven, let cool in the pan for a few minutes before removing.
- Cool completely or slice and enjoy while it’s still warm.
