Cinnamon Swirl Quick Bread

Ingredients


1 ⅓ cups white sugar, divided

3 teaspoons ground cinnamon

2 cups Niobrara Grain and Milling All Purpose Flour

1 tablespoon baking powder

½ teaspoon salt

1 large egg, beaten

1 cup milk (2% or whole)

⅓ cup Greek yogurt, plain


Directions


1. Preheat oven to 350℉

2. Combine ⅓ cup sugar and cinnamon. 

3. Combine flour, baking powder, and salt in a separate bowl.

4. Combine egg, milk, and yogurt in a large bowl.

5. Add the dry ingredients to the milk mixture. Mix until just combined.

6. Lightly grease a 9x5-inch loaf pan.

7. Pour ½ batter into pan. Sprinkle the cinnamon mixture on the batter. Pour the  remaining batter on top of the sugar mixture. Take a knife and draw it through the batter to marble the dough.

8. Place in preheated oven until toothpick comes out clean, 45 minutes. 

9. The bread is tastier when it rests overnight.
